I just got finished building up my new S-Works SL3 Tarmac (54 cm) and need some help shaving down some weight, preferably a little on the cheaper side. I'm really looking to lighten this for an Alpine Gran Fondo at the end of the season with 11,000 feet of climbing. Here is my current build up:

S-Works Tarmac SL3 (54cm)
William System 58 Clinchers (with Vittoria Open Corsa Tires)
S-Works Crankset (updating the chainrings to CT2 Stronglights which are on their way)
Dura Ace 7900 Groupset (with Ultegra 6800 Brakes, Chain, Cassette)
Fizik Kurve Snake Aluminum Seat
3T Ergonova Team Stealth Bars
Fizik Bar Tape
3T Doric-LTD Seatpost
Speedplay Zero Peddals
Chinese 19 gram bottle cages

Don't make too much fun of the stem, I am testing out a new set up before I properly slamming the stem.

The current weight of the build as it sits is 7 kg...

Wheels and brakes are where you can make the biggest dent......PX brakes and some cheap tubulars (can be found on eBay for a reasonable price) and you'll drop a significant amount. For the Fondo, you could go with an aluminum cassette as well to save 100+ grams.

cut down your steerer tube. that'll save a few grams. no cost there.

Maybe you should change the title to 'I will cut my stem after I get it correctly adjusted' so you get better responses, but I would start with the wheels too.

Zero Ti? If not Titanium spindles and bow ties are fairly inexpensive.

I agree with the previous comments about the wheels; I wouldn't want to drag those up 11k. How light is the motor?

The wheels definitely should go...Aero wouldn't do you that good on the 11k of climbing you're about to do, would it? I'd keep the brakes though unless you're ready to sheel out some sizeable cash for significant upgrades...

I am about 140-145 lbs and about 5' 8". I have thought about it and I think that for the ride I will most likely borrow a pair of my buddies 32mm tubular renyolds for the ride.

Some free weight can be saved by cutting the bottom of your seatpost as well... depending on how long it is.
M2 Racer QR's if you can find them used somewhere as I did... or a similar brand will also lose quite a bit of weight.
Chinese Ti seatpost clamp at 9g off ebay isn't an expensive option.
Not much gain here, but minimal $$$.

Edit: Although I enjoy my Williams wheelset like yours... Minimal aero if any can be measured on a climb. If you decide to use your wheelset, remove the factory graphics. I did, and found I had lost 20g per wheel!
