@ Lig: the weight limit for the Ventoux 240 is 110kg rider+bike. Isn't that enough? I doubt other wheelsets have a higher weight limit.

Ah Ok, now i see that there is plenty of room for the cable to move!!
As for the wheels, yes you are correct they are now 110Kg (I am sure the older Ventoux were 85Kg)?? Anyhow, I had a visit to the LW factory earlier this year and I was advised against the 'Gipfelsturms' because I would notice flex (being a larger rider at 195cm and 85Kg) and I should stick to the Meilensteins! Sorry not because of weight limit on the wheelset....

The wheelset and saddle look pretty much perfect for the bike.
Actually the setup is very close to the yellowfluo's team bike but my LW wheels are simply unrivaled!
I find them fine for my 78-80kgs. I had Fulcrum zero and Corima aero+ before and these where not stiffer. I have read some reviews that do not find the Ventoux stiff in comparison to higher profile LWs. I am sure this is true.
Anyway I chose Ventoux over Standard for their comfort and, most importantly, their much better reaction to crosswinds. I usually ride on windy areas and higher profile wheels are not for me.

Debranding the stem an option?

You are right about the stem. For the moment I am too lazy to debrand the stem (and the ritchey decals are not that loud either).
Anyway I am thinking of upgrading the cockpit sometime with something in carbon.
