Collected my bike last night. I am really pleased with the end result. It still needs a few minor setup changes to get the position dialled in. The traditional bend bars are making it difficult to get the lever hoods in the right spot.
I am also considering changing pedals to Shimano DA, but currently all my bikes are set up with Speedplay pedals.
After a short ride I have to say DA 7800 still shifts the best of any groupset I've ridden.
The ride feels luxurious, and compared to my carbon bikes there is noticeable flex in the frame and stem, but this is meant to be a "Sunday" bike.
I have Veloflex gumwall tyres on the way to finish off the build. I thought the Vittorias would be ok, but they just don't look right.
Weight is sitting at 9.58kg, which is not really light. By swapping tyres and tubes I should drop 170g and will be cutting the excess off the seatpost. I'm also running an Ultegra cassette which is about 40g heavier than DA.
Realistically it will end up around 9.4kg. I originally estimated a final weight of approx 6.2kg, but probably didn't factor in the weight of the leather bar tape vs Deda tape, and the heavy retro skewers.
In my opinion not a bad weight for a steel frame over 21 years old, with a chrome fork (754g) that weighs as much as some modern frames.
In comparison my sons Trek Domane 4.3 weighs 9.22kg.
At the end of the day this is not about ultimate lightness, but having a classic bike with sublime ride feel. As I've had it most my adult life, it should be good for another 21 years now

@ De zwarten - I might change the bars as I'm finding it really difficult to get the levers in the right position. The bars are new Cinelli Giro d'Italia 64's, and the traditional bend doesn't seem to suit the Shimano DA7800 levers. I will try your method to see if it makes any improvement
