will the Wolf giant cog(40) or E thirteen giant cog work with a sram xx cassette(11-36)? The websites don't say the XX works?

is there any other options for a 40t or 42T on a sramm xx cassette? I was told about ARI cogs....any US companies?

As you can't remove a sprocket, no company will be able to make one - obviously!
Impoverished weight weenie wanna-be!

Unless you are willing to machine off the 3 largest cogs to the exact correct spacing and then use a 3 cog setup like the Leonardi or Barkaruk 28-40 or 29-42. But then I'm not 100% sure that the freehub drive splines will still be correctly placed with that much machining.
However, if you were willing to give up your 11t, you might be able to do it that way with one of the single giant cogs.

And by giving up your 11t, and adding a 40t or 42t, you basically get the same gearing range as before.
Just heavier.
The only way I could see you could do it with sensible ratio changes would be to machine off the smallest 3 gears and insert a 15 and 13t (with spacer) from a low end SRAM Cassette (bolt together type) or Shimano (riveted). Would add less weight as well
So 11,12,14,16,18,21,24,28,32,36 becomes 11,13,15,18,21,24,28,32,36,42
You could remove the alloy 36 but the smallest narrow wide I have seen is a 40 which is then an 8t jump up from the 32 and a bit much, also then only really useable as a bail out gear so somewhat defeats the object.
Or just buy an XT like everyone else!

The rear cog on the xx is replaceable and you can remove it. Check this out:
