What are my limitations if I want to run this setup? Can I use a 11-34 cassette w a dura ace derailleur?

XTR 10sp has a different cable pull, you'd have to use 9sp shifters.

Or flat bar road shifters for 10 speed

The Dura Ace is not rated for a 34T largest sprocket but may work, wouldn't be likely to have the capacity for a wide front range as well.

Best I XTR/DA combo I could come up with was
Cassette: 7700 11-27
Rear Der: 7900 long cage
Front chainrings: TA Chinook 26/38
Front Der: 980 double
Front shifter: 980 double
Rear shifter: 970 9sp

FYI a little tidbit. The 970 shifters are IMO better than the 980's. They have large aluminum top cap that is fixed to the bar clamp which makes the shifter much stiffer and sensitive. The 980 shifters use plastic body caps and flex quite a bit more. However, the 980 2x front shifter works much better with the 980 2x front derailleur rather than trying to block out a gear on the 970 3x shifter.
Blah yes it is a little complicated ;-) This is my favourite drivetrain BTW. I run it on all my mountain bikes.

I have used 11-34T cassette with 42/29 2x9 setup with gripshifters on RD7800 and RD7900 with 10T pulleys and inverted or longer B-tension screw. The 7900 seem better. Since I changed to 40/27 I replaced the rear with 11-32T, but I think I will go back to the previous setup since 40x11T is not enough on the flats on my full rigid setup.

Sram Attack and Plasma, Sachs Quarz, and Nobu's tuned shifters too although the Nobu's require more strength to shift because of the smaller grip diameter, but are very light.
