Challenge make some that are 700x 30/35, but I'm not sure if they'll strech enough to fit a 45/50mm tire. They are pretty thin to start with.

Just out of curiosity, Why is tubeless not an option?

not ready to put out the cash for a tubeless set up. im sure i would like to go tubeless some day but right now right now. i have a superlight set of rim brake wheels now. i think my set up is lighter than a tubeless disc set-up, but that is another whole discussion.
I use 26" Latex Michelins in my 29" tires all the time. Have you ever pumped up a latex inner tube outside of the tire? It gets really big... The 26"->29" stretch is a piece of cake for these tubes. Don't worry.
I'd rather use a 26" latex tube than a stretched 700x35 tube. The latter would get very thin walls, the first would not.

I've used Michelin Latex 26" tubes in 29er wheels before, never had a problem.

Gotta train on that a bit. I start opposite of the valve hole and use a foot to hold the tube in the tire, while I work the tube in on both halves of the wheel.
No reason to use heavy 29er specific tubes or 700c latex tubes that are too thin to be safe. Just use 26" latex.
